Stir Fried Chicken With Fresh Ginger, Garlic, Cilantro &
Spring Onions And Chicken Rice

To cook the rice :-
3 bowls of rice (wash and drain).
My daughter loves this dish.....everytime when I tell her that I am cooking this dish, she will say "Wow" and at the end, she will have 1 1/2 bowls of rice and my son will have two bowls of rice. Sorry, there is no measure for this dish. You just have to estimate for yourself. Don't be afraid, you can cook it. Nothing is impossible. Happy trying.




Spring Onions
Cilantro
Garlic
Fresh Ginger (I only use 1/2 of this fresh ginger)




1/2 Free Range Chicken (Kampung Chicken)




Chop the fresh ginger and garlic.
Cut the Cilantro and Spring Onions to around 1 inch.




Cook the chicken with water until cooked.
Place the drumstick at the bottom because it is the hardest area to cook.
The chicken is cooked when there is no blood ooze out when you prick the drumstick.
After cooking the chicken, make sure you retain the chicken broth to cook the rice.




Once cooked, cut the chicken into pieces.




Heat up the wok and pour cooking oil.
Once heated up, pour fresh ginger and garlic and fried until slightly brown.




Pour chicken and stir fried for a few minutes.




Sprinkle some salt and pour some dark soya sauce and stir fried for a few seconds.




Pour cilantro, spring onions and stir fried until well done.
Do not over cook the cilantro and spring onions.

To cook the rice :-
3 bowls of rice (wash and drain).
Pour the earlier chicken stock to the rice to cook.
Pour 3 tablespoons of concentrated chicken stock by Maggi.

Kikuo's Orange Butter Cake

Kikuo's Orange Butter Cake
My family and I would like to name this cake Kikuo's Orange Butter Cake to our friend, Kikuo Ikegami for his birthday on 9 September.



Step 1 - Grease and flour the cake tin. Start heating up the oven.


Step 2 - From clockwise.

170 gram butter
170 gram caster sugar
2 grated oranges rind
3 medium size eggs
2 tablespoons milk
220 gram self raising flour with 1/2 teaspoon baking powder (sifted)


Step 3 - After beating the butter for 2 minutes, pour in the caster sugar and beat until pale in colour.


Step 4 - Pour in the orange rind and beat well (short while only).


Step 5 - Pour the egg one at a time and beat. If the batter curdle, pour one tablespoon of flour.


Step 6 - Pour milk and beat well (short while only).


Step 7 - Pour the flour and beat well.


Step 8 - Pour the batter into the cake tin and bake for 60 minutes at around 170 degree celcius.


Step 9 - It is cooked when the skewer comes out clean. Cool the cake for 20 minutes.


Step 10 - After cooling the cake. Turn out onto a plate.

Soya Bean Agar-Agar

Soya Bean Agar-Agar

A Very Refreshing Dessert and Easy To Make
(Note to non-Malaysians : Agar-agar has a harder texture compared to jellies)





Step 1 - 10 gram of agar-agar powder pour into the bowl.






Step 2 - 1 liter of soya bean milk pour into the same bowl.






Step 3 - Boil the agar-agar powder with the soya bean milk with medium fire until the agar-agar powder dissolved and strain.






Step 4 - Pour the soya bean milk into the mould and cool for 10 minutes before putting into the fridge.






Step 5 - Serve chill.

Fluffy Pancakes

Fluffy Pancakes



Step 1 -
230g plain flour
1 tablespoon baking powder
Pinch of salt
1 teaspoon sugar
2 medium size eggs (beaten)
30g butter (melted) or 3 tablespoons melted butter
300ml or 1 1/3 cups milk


Step 2
- Pour all dry ingredients into the bowl.


Step 3
- Pour all wet ingredients into the dry ingredients.


Step 4
- Mix with a balloon whisk till smooth.


Step 5
- Pour the batter into a jug.


Step 6
- Heat up the non-stick pan
(do not pour any cooking oil or butter onto the non-stick pan)
and then pour the batter to your desired size.
Once you have noticed the bubble appeared,
then flip with a spatula to the other side.


Step 7
- Once cooked, lift it up wth a spatula from the non-stick pan.


Step 8
- You can cook to any sizes that you like.
Big or small. Yummy! Yummy!
You can eat the pancake with honey, peanut butter, strawberry
or marmalade jam and etc.
