Minced Meat Ball Porridge

Minced Meat Ball Porridge
This is a very smooth porridge. Lovely to eat during hot season or when you are recuperating from sickness.



Step 1
1 cup of rice - wash and drained and marinade the rice with salt and oil.
(By doing so, the porridge will come out smooth)

Stir in salt, pepper and corn flour into the minced meat.
(Note : Corn flour to make the minced meat stick to each other)

Thinly slice young ginger.



Step 2
Round the minced meat into balls.



Step 4
Boil the rice with water.
(I poured 3 big bowls of water. The size of the big bowl as per picture at Step 1)



Step 5
Once, the water is boiled, slightly open the lid cover. If not, the rice water will spill out.



Step 6
While boiling, make sure you stir the rice constantly to avoid the bottom being burnt.
If the porridge is too thick, pour hot water into it and stir.



Step 7
Pour the minced meat balls into the porridge and cook until done.
When you noticed the meat changed colour, then it is cooked.



Step 8
Stir for a while until all the whole minced meat balls are cooked well.
Or
Maybe you take out one minced meat ball to test it out.



Step 9
Once done, pour the slice young ginger and stir.



Step 10
Serve hot.
Or
When you want to eat later, remember, you can always heat it up and if the porridge is thick, you can always pour hot water and stir.

Chocolate Chips Cupcake

Chocolate Chips Cupcake

This morning, my daughter told me that she would like to eat Chocolate Chips Cupcake and not sure whether I am well enough to bake it because as at today (27 October 2009), I am in the 15 days after my cysts operation. Since, I am not in the excruciating pain, so I will be baking it. By the time I finished uploaded all these pictures, my son has eaten 6 pieces of the cupcakes.
Ha! Ha! I have warned my son not to finish those gorgeous cupcakes.
Need to keep for my lovely daughter....she has been studying hard for her year end 2009 exam.





Step 1
Heat up the oven and place 20 cupcake paper cases into the muffins tray.
To avoid messy while pouring the batter into the cupcake paper cases,
it will be a good idea to use the ice-cream scoop.




Step 2

Ingredients "A" :-
125 g butter (room temperature).
1 tsp vanilla essence.
2/3 cup caster sugar.
1 1/2 cups self raising flour (shifted).
3 eggs (room temperature and whisked).
1/4 cup milk (room temperature).

Ingredients "B" :-
1/2 cup chocolate chips.
1/2 cup finely chopped dark chocolate.

Beat all the ingredients "A" for 3 to 4 minutes.




Step 3
Add ingredients "B" and fold well.




After folding well, use the ice-cream scoop to scoop the batter into the cupcake paper cases.




Bake at 180 Degree Celcius for 30 minutes or until done.

Stir Fried Cabbage With Dried Shrimp
Once done, pour the ready cabbage into the serving plate.
This is the easiest dish to be prepared.
Even my son loved to prepare this dish.

[Note : There is no measurement for this recipe.
You have to have sight, sense and taste for it.]


Wash, drain and chop cabbage to your desired sizes.
Wash and drain some dried shrimp.
Chop garlic.



Heat up the wok or pan.
Pour and heat up the cooking oil.
Pour dried shrimps and garlic and fried until golden brown.


Pour the cabbage and stir fried for 2 minutes.



Pour some water.....not too much, if not, the cabbage will not be crunchy.


Stir fried the cabbage until soft but not too soft to avoid the cabbage to be over cooked.
Pour some salt and taste it.


Once done, pour the ready cabbage into the serving plate.
Now! you have a lovely Stir Fried Cabbage With Dried Shrimp and
you can savour this dish with your piping hot rice and other ready dishes.

Chocolate Chips Coffee Cake

Chocolate Chips Coffee Cake

My dear colleague Stephanie Chua gave me this recipe. The taste and texture of the cake turn out great but my daughter said next round to put more chocolate chips.




Ingredients from clockwise :-

150g Butter
150g Castor Sugar
3 Eggs
55g Chocolate Chips
170g Self Raising Flour
1tbsp Milk
2tsp Instant Coffee

(Note : Remember to start heating up the oven)





Beat the butter and caster sugar until soft, light and fluffy.




Beat in eggs, one at a time.
(If the batter curdle after the 1st egg, beat in 1 tablespoon of flour to stabilise the batter and then continue beating the balance of the eggs)




Combine chocolate chips into the flour
and then beat in 1/3 of the flour mixture into the batter.




Pour the milk mix with the instant coffee into the batter and then beat further.




Pour the remaining flour into the batter and beat until done.
Please do not over mix the batter.




Grease and line the cake tin.




Pour the batter into the cake tin and bake at 180 degree Celsius at
approximately 60 minutes or until done.




Remove from the oven and cool the cake.




Cut the cake and serve to your loved ones or share it with your neighbour.

Vegetable Spiral Pasta In Chicken Tomato Sauce
You can whip out this dish in less than 25 minutes during the weekend brunch
with your family or maybe for friends dropping by at your house
without any warning!!!
[Note : There is no measurement for this recipe.
You have to have sight, sense and taste for it.]


Pour out the Vegetable Spiral Pasta from the package.
(you can change the above pasta to spaghetti or other type of your liking)



Pour out the Ready Made Tomato Sauce from the bottle.
(if you like Mushroom Tomato Sauce...by all means...cook it)



Thaw the Mince Chicken to room temperature.



Pour Olive Oil and cook the Mince Chicken until done.
(don't panic, if you do have olive oil....you can use other types e.g. corn oil, peanut oil or etc)



Once the chicken is cooked, pour the tomato sauce into the pot
and cook until bubble appears and then turn off the fire.
(if you use ceramic pot, the sauce retain the heat longer)



Pour the pasta into the boiling water with 1 tablespoon of salt and a few drops of olive oil.
Once the pasta is cooked, use the colander to drain the water
and pour the pasta into a serving dish.
(olive oil prevent the pasta to stick to each other and salt to make the pasta has some taste)



Scoop cooked pasta into a plate and pour tomato sauce with minced chicken
on top of the pasta and serve to your family or friends
with a few dash of cheese powder on top of the tomato sauce.
