Fried Rice With Luncheon Ham
Today, 18 February 2010 is the 5th day of Chinese New Year.
Another 10 more days, Chinese New Year will end.
My family and I are bored with outside food and today end up cooking two simple dishes
e.g. Fried Rice With Luncheon Ham and Stir Fried Cabbage With Dried Shrimp.

6 bowls of cooked rice (preferably overnight rice)
5 eggs (beaten with fork with a dash of salt and pepper)
1 can of luncheon ham



After heating up the wok, pour some oil to heat it up.



Pan fried the luncheon ham.



Once, the luncheon ham has been pan fried, dish it out.



Wash the wok, heat up the wok and oil.
Once, the oil is heated up, please pour 1/2 tablespoons of salt
and stir for a few second.

(Note : My mother told me that by stir fried the salt this way, the fried rice is tastier.)



Then pour in the cooked rice and stir until the cooked rice is heated up.



Make a well in the center and then pour some more oil.



After 2 minutes, pour in the beaten eggs



After 2 minutes, cover the beaten eggs with the cooked rice
and wait for 2 minutes.



After 2 minutes, stir the rice occasionally until all combined.



It is almost done, once you have noticed that the eggs are cooked and not wet.



Lastly, pour in the luncheon ham and stir until combined.



Dish out and serve in a serving plate.



Now, you and your loved ones can savour the piping hot

Fried Crab Sticks

Fried Crab Sticks
Chinese New Year will fall on 14 February 2010.
Yeap, exactly on Valentine Day!
Anyway, my family and I would like to wish all Chinese (far and near)
A Happy Chinese New Year and
all those love birds A Happy Valentine Day.

This snack has become a very popular snack during Chinese New Year.



Preheat your fryer.




Make sure you have thawed your crab sticks at room temperature.




Shred crab sticks either by using your fingers or knife.
I prefer using knife in order to have all in the same sizes.




OR may instead of shredding your crab sticks....you can cut into square.




Once the oil has been heated up, pour crab sticks into the fryer net.




Lower down the net fryer to fry crab sticks.




Once cooked and brown, lift up the net fryer
and let it be for around 2 minutes to let the oil drip out.




Then, pour crab sticks into paper towel to absorb those oil and cool.



Once cool, pour crab sticks into container.
Make sure it is cool before pouring into the container....if not your crab sticks
will become soft later and won't be crispy.

Cranberries Butter Cake
To make my butter cake more interesting, I put some cranberries.
After first try, if you find this cake a bit oily,
then reduce the amount of the margarine or butter.
Less than 2 days, my family finished this cake.
You be the judge!



250 g butter (or 230 g butter)
230 g castor sugar
4 medium size eggs
1 tsp vanilla essence



4 tbsp milk
250 g self raising flour
120 g cranberries (mix with 1 tsp of flour to avoid the cranberries from sinking to the bottom)



Beat the butter or margarine with castor sugar until light.



Then, add in egg and beat one at a time.
If curdle, then add 1 tbsp of flour.



After finishing beating the eggs, pour in vanilla essence and beat.



Divide flour into half and beat until done.



Pour in the milk and mix evenly.



Lastly, pour in the cranberries and mix well.



Make sure that your baking tin is lined and greased.
(Well, don't forget to heat up your oven before starting making the batter)



Pour the batter into the lined baking tray and bake at 180 degree celcius
at around 50 to 60 minutes or until done.



Once done, take it out and cool for 20 minutes.
