Stir Fried Dried Scallop With Broccoli And Cauliflower
My kids was telling me that both of them would like to eat
broccoli and cauliflower.
So, I bought these two famous vegetables from the
supermarket.
Do try out this simple, healthy and delicious dish.



Soak both of the vegetables with water and salt for 1/2 hour.
Then, wash and drain the water.



Some dried scallop.
You only need around 6 of these dried scallops.
Soak with water for 45 minutes.
Wash and drain the water.



Use two fingers to shred the scallops.
Don't worry...it is very easy....because the scallops
already soft after soaking in the water earlier.



I am out of garlic, so I became creative by dicing
around 4 shallots.



Boil the water
(put 1/2 tablespoon of salt and few drops of any type of cooking oil)
and then put in all the vegetables and
cook until there are soften and
drain the water.



Heat the oil in the frying pan or wok.



Lightly brown the shallots.



Pour in the shredded dried scallops and
stir fried until lightly brown.



Then, pour in both of the vegetables.



Stir fried for a few minutes and
then pour in 1/2 cup of hot water and
some salt, pepper and chicken stock and
stir fried until combined.

(it is ok if you do not wish to put chicken stock,
it is just a matter of preference)



Dish out and serve in a serving dish.
Ain't it look delicious by eating with hot rice.
Yummy! Yummy!

(Well, this dish was finished by both of my kids. No left over.)

Dried Sauce Noodle (Kong Low)

Dried Sauce Noodle (Kong Low)
Now, my daughter can have her quick lunch or
maybe to fill up your hungry stomach!

While I was preparing the Steamed Kaya Cake,
my daughter said that she is hungry and wanted
to have her lunch....(my son and I had lunch earlier)
and since I cannot go out to buy her lunch,
I am going to cook her this simple dish
"Dry Sauce Noodle" (in Cantonese translation- Kong Low Noodle).



1 1/2 piece of dry noodle



Boil sufficient water



Once the water is boiling, put in the noodle


While waiting the noodle to cook, prepare sauce.......
2 tablespoons of soya sauce
1/2 tablespoon of dark sauce
1 tablespoon of garlic oil
Dash of pepper



Stir the noodle occasionally
Once you bite the noodle and feel the middle part of the
noodle is cooked, then it is done



Use colander and drain the water



Pour the cooked noodle into the sauce and
stir until combined



Now, my daughter can have her quick lunch or
maybe to fill up your hungry stomach!

Since, this is a quick meal, I did not put any vegetables.....
you can cook any of your favourite vegetable and put on top of your cooked noodle.

Steamed Kaya Cake

Steamed Kaya Cake

Tomorrow will be Monday and I need to prepare
snack for my daughter to bring to school and
my son for his breakfast before going to college.
Since I am lazy to bake cake,
I thought of this simple recipe "Steamed Kaya Cake"
"Kaya" is Bahasa Malaysia language for Coconut Jam.
This kaya is made from coconut, sugar and steam for few hours before
turning into paste. It is very aromatic and sweet.
It is delicious to be eaten by spreading on top of toasted bread.




Line a 9 inches round cake tray or square tray




5 eggs
180g caster sugar
1/2 tablespoon of ovalette




200g plain flour
1 tablespoon baking powder
100 ml fresh milk
100g kaya




Pour in the eggs, sugar and ovalette




Beat until light and creamy




Then, pour in the flour and baking powder




Beat until combined




Pour in the milk and beat until combined




Once well combined, turn off the beater




Pour half of the batter into the lined baking tray




Once the water from the wok is boiling,
put the baking tray into the wok and
steam for 10 minutes




Once steam for 10 minutes, take out and
spread the kaya on top




Once you have spread the kaya,
pour the balance of the batter and steam for another 15 minutes




Once steamed, let it cool (around 1/2 an hour)




To loosen the steamed cake,
take the back of the knife and run through the cake
and flip over the steamed cake on to the serving plate
and cut into desired sizes




The Steamed Kaya Cake is sweet and fluffy.
Best eaten with hot Milo or Coffee or..........

Vegetarian Glutinous Steam Rice (Loh Mai Kai)

My mum is a vegetarian person (she also does not eat garlic and egg).
I am making this for her.
She is now 73 years ago and still healthy.
Sometimes, it is good to our body
when we do not consume meat for the whole day.
Do try it out. Happy cooking!




300g of Glutinous Rice (wash and soak with water for 4 hours)




8 pieces of dried Chinese Mushrooms (wash and soak with water for 4 hours)




After 4 hours, drained the water
and cut the steam of the dried Chinese Mushrooms
(keep the mushrooms and discard the steam)




Drained the Glutinous Rice water with colander




Pour 1 1/2 cups of water into the Glutinous Rice




Steam the Glutinous Rice for 45 minutes or until cooked.




Prepare the sauce :-
3 tbsp of light soya sauce
2 tsp pepper
2 tsp sugar
1 tbsp salt
2 tbsp oil
1 tbsp sesame oil
1 tbsp dark soya sauce
1 tsp five spice powder (cantonese translation : ng heong fun)




Once cooked, lift up




Let it cool for 1/2 hour




Stir the rice (any direction will do)




Pour in the sauce




And stir until well combined
Remember to taste it...
if not enough of salt, pepper or etc....by all means put some more




Make sure you grease the surface of the bowl with oil
(to avoid the rice stick to the bowl)




Then, put the mushroom with bottom facing you




Scoop the rice into the bowl and level the surface




Put the bowl on top of a flat plate




Steam another 30 minutes




Once ready, lift it up.
If you want to eat, use the back of your spoon or fork to run
around the rice to loosen it




Then, turn the bowl upside down with another plate at the bottom
to hold the Glutinous Rice




or....after the 2nd steaming and you do not wish to eat,
then put inside the fridge (after all has been cooled)
If you want to eat later, take it out from the fridge
and heat it up again (15 minutes or less)




Look like this.....after the 2nd steaming.
Isn't it is delicious!
