Braised Tow Fu Pok

Braised Tow Fu Pok
Our whole family just love all sort of bean curd.
Today, I am cooking Braised Tow Fu Pok for dinner.

Some Tow Fu Pok and Fish Paste.

With a knife, slit one side only to open up the Tow Fu Pok
and scoop one spoonful of fish paste into it.
Repeat the same process for all the Tow Fu Pok.
If you have balance of the Fish Paste,
keep at one side for the time being.

After the process, look like this.

Heat up the non stick pan with little bit of oil.

Pan fried the fish paste side of the Tow Fu Pok only until slightly brown.

Once done, dish out.

Pour all the Tow Fu Pok and 2 cups of water
into the pot and boil.

Balance of the Fish Paste.

2 tablespoons of Oyster Sauce, 1 tablespoon of Soya Sauce,
dash of Pepper and Sesame Oil (combined well).

After 15 minutes boiled, scoop fish paste into the pot
and cook further 10 more minutes.
Pour all the sauce, combined well and cook further 15 minutes.

Once done and taste is correct, garnish with some chopped spring onion
and serve with hot rice.
Isn't it is delicious and simple to cook!

Cream Cheese Kikuo's Orange Butter Cake

Cream Cheese Kikuo's Orange Butter Cake

You will love it!
I finished with the cake at around 3.00 pm and
by late afternoon, the balance of the cake left only 1/2.

250 g cream cheese (thaw at room temperature)
2 tablespoons milk
200 g icing sugar

Pour all the cream cheese, icing sugar and milk into
the beater bowl.

Beat until combined and smooth.

Put aside.

Once your cake is baked, let it cool for 10 minutes and
run around the baking tin with a knife to loosen the cake.

Put the Orange Cake at a serving plate and
let it cool further.

Once totally cool, cut the cake into half.
Make sure the bottom cut cake is always higher
than the top cut cake.

Look like this.

Spread evenly the cream cheese on top of the bottom cake.

And close it with the top cake.
(Just like making sandwich)

Cut into desired sizes.

Yummy, your whole family sure will love it.

I know it is fattening...exercise half an hour after eating it.
Ha! Ha! Ha!

Cranberries & Walnuts Bread

Cranberries & Walnuts Bread
My son said that I blogged my daughter's favourite foods more than his.
So, I promised to make Quiche for him and alas, since my wrist is in pain,
I opted to make Cranberries & Walnuts Bread for him.

2 cups of flour with 1 tablespoon baking powder (shifted)
and 1 cup of caster sugar.
1 egg (lightly beaten), 1 cup of milk and 1/4 cup corn oil.
1/2 cup toasted walnuts and 1/2 cup dried cranberries.

Combine egg, milk and corn oil.

Combine flour and caster sugar.

Mix flour and caster sugar until well and
make a well in the center.

Add in the combined egg mixture and stir until well.
Do not stir too much. It is ok eventhough the batter is lumpy.

Fold in walnuts and cranberries until well combined.

Look like this....please do not mix too much.

Take out the prepared baking tin lined with greased paper.

Pour in the batter and bake at 180 Degree Celsius
for 1 hour or until done.

Once done, take it out from the oven and let it cool for 15 minutes.

Then take out the bread from the baking tin
and cool completely on wire rack.

Once cool completely or store overnight....you can cut it
and eat with a cup of coffee, tea, milo or any of your hot
favourite drinks.
My husband told me that it will taster better if we toast it and
he will be doing it for tomorrow breakfast.
Well, you will be the judge.

Chapati (Flat Bread)

Chapati
It is Indian Bread made of wholemeal flour.
Past few months, my daughter has been eating Chapati and
I told myself that I need to learn to made it.
At least, she can eat it any time of the day,
without us driving all the way to buy it for her.
After some research via internet and advice from Indian friends,
I have the courage to make it and to my surprise,
it is very successful after 1st attempt.

225g wholemeal flour
1/2 cup of warm water and mix with 1/2 tsp of salt
1 tablespoon of corn oil or ghee

Pour the wholemeal flour into a bowl.
Make a hollow in the center.

Pour oil into the center of the wholemeal flour.

Use your fingers, stir it twice.

And then with your fingers, rub the wholemeal flour and oil.

Then, pour 1/2 of the salt water and knead the dough for 10 minutes.

Lastly, pour in the balance of the salt water and
knead for another 5 minutes.

Look like this after kneading.

Cover. Let it rest for 1/2 an hour to 45 minutes.
(If you do not have a bowl cover, then use damp cloth)

After the dough has rested, take it out to a floured table.

Cut into 8 pieces.

And roll each piece into round shape.

Put at one side.

Flatten with a roller pin to your desired thickness.
(we prefer to the thinnest)

We are not expert, so we do not have round shape.
All rolled by my dear daughter.
I can see she is having a fun time rolling those dough
while I am heating the pan.

Heat up griddle (if you have it) or non-stick pan.
We do not use any oil.

Place the flatten dough into the hot non-stick pan.

Once you noticed some bubble appear, flip to the other side.

Cook further.

My daughter and I managed to make 8 pieces.
By the time I have washed all the utensils, left only 3 pieces
because my daughter and husband said it is yummy!!!
eventhough eating without curry.
My daughter told everyone in the house not to finish it because
she is saving for tomorrow breakfast!
I have taught her to use the steamer to warm the bread for breakfast.
Happy Eating, my dear daughter.
