Cocoa Cupcakes

Cocoa Cupcakes
You can have your cupcakes any time of the day.
I have to bake something cause my two children requested for some 
baked food in the house when I'm going to work tomorrow.
Well, this is the easiest bake and it also won't go wrong.
Look at the pictures and you will surely say that I am right.

To all the drivers out there, please use your indicators when you want
to make a turn and brake when you are required to.
I've noticed that nowadays drivers do not like to use indicators or brake.
Maybe their instructors did not teach them or maybe they are from planet Mars.
I hate those drivers who do not use indicator or brake.
For safety for you, your family or your passengers, please use it.



225g Butter (room temperature).
225g Self Raising Flour (shifted).
4 Eggs (room temperature).
1 tsp Vanilla Extract.
4 tbsp Cocoa powder.
1 tsp Baking Powder.
225g Caster Sugar.



Placed all the ingredients into the bowl
and beat until combined.



Look like this after less than 2 minutes.
Beat further.



Look like this after well combined.



Line your muffin tray with cupcake paper cases.



Use ice cream scoop and scoop the batter into the
cupcake paper cases until 3/4.
Do not fill up fully, it will over flow while baking.



Bake for 185 Degree Celsius for 30 minutes or 
until skewer come out clean.



Yum! Yum! Yummy!
My daughter said it is not oily (they do not like cake to be oily),
fluffy and taste is great.  Told me to add more cocoa for next try.
My answer to her .....add more cocoa? I am afraid it will be bitter!!!



My son had three of this cupcake when he came back
from college for extra class.

My dear husband, I know you will be jealous upon reading
this blog....will bake for you when you are back.

Scrambled Eggs With Tomato
Last weekend, while my daughter and I buying some groceries,  
she suggested to me to make Scramble Eggs With Tomato for 
her breakfast.  Well, today, I am fulfilling my promise to her 
to make this Scramble Eggs With Tomato.
The picture said a thousand words.  It is delicious and easy to make.
Cook for your family, sure they will remember your home cook
delicious food.
When my children told me that their friends envy them of having a mother
who love to cook for them, I feel happy because they are telling 
their friends this and that food that their mother is cooking for them.
Another incident, my husband friend's niece bought some cheese tarts
and my husband commented it was not delicious....my wife's cheese tart
is better and delicious....see my face :)  you know what I mean.



1 ripe Tomato.
3tbsp of Milk.
3 Eggs.



Dice the Tomato to your desire sizes.
Break the eggs and put in 1/2 teaspoon of Salt and Pepper.
3tbsp Milk (room temperature).



Lastly, pour in the Milk.



Whisk with fork for a few seconds or until all combined.



Heat the non stick pan with oil or butter.



Pour in the eggs batter into the non stock pan.

(Note : Do not go anywhere, you have to work very fast)



Use your spatula to push the eggs batter from the outer side to the middle.

Once you saw the eggs batter like the above picture, 
pour in the diced Tomato to the eggs batter and also
pushing the outer side to the middle.



Once it is cooked and not dry, switch off the fire.
Dish out and serve.

(Note  : Remember that you are not frying eggs,
thus the batter is not dry.)



My daughter gave me a thump up.  Today, her stomach is very happy and contented.
She finished the whole plate (not this plate....the other bigger plate).
Ha! Ha! Ha! How I wish my husband and son were around to savour it.
Upon seeing this post, sure both of them will tell me 
why I am cooking it when they are not around?
Baiting, baiting them.....don't be disappointed, sure will cook again for them.

Crustless Sausage, Crab Stick Quiche

Yesterday morning, my son and I had Dim Sum for breakfast.
(Husband went for day trip to Miri and daughter slept like a log.)
While both of us having breakfast, my son asked me what will I
be buying birthday present for his coming 21st birthday, next month?
Yeap! next month May 23, will be his 21st birthday.
Now he is a grown young adult, of all the hard work taking care of them,
my husband and I have no regret because both of them (my son and daughter)
 has turn out pretty well.....(so far so good)...cross our fingers.
Ok...back to the birthday present...I asked him what kind of present does
he want and as usual being young adult...
he asked for some electronic gadgets!!!
Told him that I will discuss with his Dad.
Then, he changed to another subject of requesting me to bake him Quiche.
Ow...a lot of work, my dear (my response to him)....
his mischievous ideal came out....
don't make the crust (less work for Mummy)....Ooh! what a good ideal!
 In the afternoon, while he is in the college for extra class,
my daughter and I went to Tesco to buy all these ingredients to make Quiche.
I never thought of making Crustless Quiche and it turn out perfect.
By the next day, Sunday afternoon, left only one piece.
It is very easy to make and Happy Making and Baking.
;)


 1 1/2 cup of Whipping Cream.
5 Eggs.
1 Big Yellow Onion.
8 pieces of Crab Sticks.
16 pieces of Cocktail Sausages.
175g Mozzarella Cheese.


 Line 9 inches of Baking Dish with Aluminium Foil.


 Dice the Yellow Onion.
Shred the Mozzarella Cheese.
Slice the Cocktail Sausages and Crab Sticks.


 Saute the Yellow Onion, Cocktail Sausages and Crab Sticks.
separately with oil.


Crack all the Eggs inside a bowl.
(Told my daughter that one of the eggs has twin yolks).


Pour in the 1 1/2 cup of Whipping Cream.


Slightly beat the Eggs and Whipping Cream until
well combined.


Pour in all the Yellow Onion, Cocktail Sausages and Crab Sticks
and mix until well combined.


Pour in 1 teaspoon of Pepper and 1/2 teaspoon of Salt
and mix until well combined.


Once well combined, pour the batter into the lined baking dish.


Lastly, scatter the Mozzarella Cheese all over the baking dish.


Bake at 190 Degree Celsius for 55 minutes or until
skewer came out clean.
I was so happy upon see the Quiche turn out so perfect.


Doesn't it look delicious.

You won' regret it.  It is easy to make and cheap also compare to buying from shop.


Next week, I will be making another type of Quiche since I have extra
ingredients hyphenating inside my fridge and also requested by my
dear son and daughter.

Butter Cake

Butter Cake

This Butter Cake is superb. You must try to bake it.
Once you take your first bite, there will be no words from your mouth,
because as TinTin said this cake is moist, buttery and soft.

4 Eggs (separate the egg white and egg yolk).
170g Caster Sugar (divide into half).
1tsp Vanilla Essence.
250g Butter (room temperature).
200g Self Raising Flour (shifted twice).
1tbsp Milk (room temperature).




Beat Butter, Caster Sugar and Vanilla Essence until light.




Add in Egg Yolk, one at a time and beat until combined.




Add in Milk and beat until combined.




Add in half of the Self Raising Flour and beat until combined
and then add in the last half of the Self Raising Flour.




and beat until combined.




Whisk Eggs white until foamy.



Add in Caster Sugar slowly and whisk until foamy and....




soft peak.




Fold in the the half of whisked Egg White into the batter.




And fold until combined and lastly add in the last half of the
whisked Egg White into the batter and fold again until combined.




Two lined baking tin.




Divide the batter into two and pour into the lined baking tin.
Bake at 185 Degree Celsius for 50 minutes or until skewer came out clean.




Once baked, take it out and cool for half an hour before turning
into serving plate.




Yummy! Yummy! Yummy!

my son requested today before he went to college for extra class.
