Crustless Button Mushroom & Sausage Quiche
Isn't it is mouth watering?  
I baked this for my son 21st Birthday which falls on 23rd May.
Now, legally he is free like a Goat (Huh! You must be wondering why Goat?
Because his Chinese Zodiac sign is Goat and it is kind of cute to say free 
like a Goat instead of Bird.  
You must be wandering "What a Weird Mother?" Ha ha Ha).
  

Daddy and Mummy would like to wish our dearest son,
Yo Hong Quan a Very Happy 21st Birthday.

Birthday Boy and Mummy
Last weekend, we celebrated at TGI Friday at Pavilion.
That day, my dear Husband really spent on all three of us......
should be only to the Birthday Boy but end up my dear Daughter and I
also received presents!
Birthday Boy will be celebrating with all his 21 school and college friends
at Shabu One, Lot 10 on Saturday night.
What a good number "21" school and college friends celebrating his 
21st birthday!
Must buy lottery.....Ooop! I don't gamble.....How?


Daddy and Daughter
(Sshhhhh.....Don't tell my husband)......My dear Daughter knows the way 
to manipulate my dear Husband for things and others goodies.


Mummy and Daughter.
(Another 2 more years, she will be 21 years old).

Both of them growing up very fast, my husband and I getting older and older.
My husband and I are very proud to know that both of them has grown up
to be good person, polite to others, filial to parents and 
grand parents, care for unfortunate people and happy to know that 
both of them don't fight like enemy.  Ha ha Ha.  
I heard a lot of horror stories about siblings fighting among themselves.
The End!  Back to my recipe.


1 1/2 cups of Whipping Cream.
5 Eggs.
15 pieces of Cocktail Sausages (sliced).
175 g Mozzarella Cheese (shredded).
6 pieces of Button Mushroom (sliced) - Forgotten to take photo).
1 tsp of Pepper and 1/2 teaspoon of Salt.


Break 5 Eggs into a bowl.


Pour in the Whipping Cream, Pepper and Salt.


Beat until all combined and leave a one side.


Wash and slice Button Mushrooms.

Saute the Button Mushrooms and Cocktail Sausages for a short while with oil.
(Do not over cooked it).


Look like this.


Pour in all the Button Mushrooms and Cocktail Sausages
into the beaten Whipping Cream & Eggs.
Beat until combined.


Pour the batter into a 9 inches baking dish lined with aluminium foil.
(I lined it with aluminium foil because it is easier for me to take
out the cooked Quiche when it is ready to be eaten.)


Scatter with the shredded Mozzarella Cheese.


Baked at 190 Degree Celsius for 55 minutes or until skewer
came out clean or not wet.


Hu La La....Delicious Delicious.
If you cannot finish it within the day itself, please cover it and put
into the fridge.  If you want to eat it again, you can warm it using oven
or microwave or eat it cold.....the choice is yours.

Vegetarian Fried Chives Fritters
This is one of my favourite snacks.
Crispy outside and soft inside.
I must be crazy in love with chives, recently I have blogged another
recipe with Chives also....well, as long as it is delicious, why not?
It will be best in the world, if you are eating it with thai chilli sauce
....see  my happy face    :)

I am submitting this Vegetarian Fried Chives Fritters to



1 Egg.
50g Chives (cut into 1 inch length).
300g Flour.
1 tsp five Spice Powder.
1 tsp Salt.
1tbsp rice Flour.
300 ml to 350 ml Water.


 Pour all the above ingredients into a bowl
(except for the Chives).


 Mix thoroughly until combined.


 Lastly, pour in the Chives.


 And mix thoroughly until well combined.
If you noticed that the batter is thick, please pour in more water.
The batter should be runny but not too runny.
If the batter is thick, then the fritter will be hard.
My first three fritters was edible but hard, that is why I pour in more water.


 Once your batter is ready, put at one side.
With a pot with cooking oil, heat up the cooking oil with the ladle inside.
You need to heat up the ladle, if not your batter will stick to the ladle.


 DO NOT SUBMERGE the ladle into the batter.
With a spoon, pour the batter into the ladle until 3/4 full.


 With the batter inside the ladle, put in slowly into the boiling cooking oil.


 A short while, with a chop stick, push the fritter out from the ladle.


 Fry further until both side golden brown, on and off turning both side.
Dish and drain on top of a wire rack.
My mother told me by doing this step, the fritters won't be too oily.


While I was frying these fritters, my family said the weather outside
is so humid and hot, scare after eating it, they will have sore throat.
He he he....they say only....after 1 hour, all gone from the plate.
I manage to eat two pieces only.  Who are the one finished it?
You know I know lah.........

If it wasn't for the fact that Zoe from Bake For Happy Kids visited my blog,
I wouldn't know that she is organising the Blog Hop Event, Cook Like A Star (Ina Garten).
Well, I am submitting this Breakfast Fruit Granola Crunch to Cook Like A Star 
hosted by Zoe, featuring Barefoot Contessa for this month.

My daughter was revising her A Level Exam inside the piano room and with the i-pad, I show her this recipe and she said oooooh! Wah! You have made it?  
I said not yet because it is for your breakfast tomorrow...she gave a big grin.  
I know she will love it.  At least I contribute something to de-stress her.


1/2 cup diced Strawberries (around 5 Strawberries).
1/2 cup diced Pineapple (1 sliced Pineapple).
1/2 cup diced Apricot (around 6 pieces Apricot).
1/2 cup Granola (please click here for the recipe).
1/2 cup Yogurt.
(This recipe is for two persons).


Mix the Strawberries, Pineapple and Apricot until well combined.


With a glass, alternately layer with mixed fruits, yogurt and granola.


Repeat the above for the 2nd layer until finished.


My daughter had two glasses of this.  It's means it is delicious, am I right?

Granola (Oat, Almond & Sunflower Seed)

Granola (Oat, Almond & Sunflower Seed)
This Granola is very healthy.  You can eat it as snack, with milk or yogurt.
Easy to make.  
My family very crazy with Granola, buying off the rack is quite expensive compare making it yourself.  
Do try it out!


2 tablespoons of Honey (I use Manuka Honey).
3 tablespoons of Vegetable Oil (I use Corn Oil).
1 cup Old Fashioned Oatmeal or Quick Cooking Oatmeal (not Instant Oatmeal).
1/2 cup sliced or silvered Almond (I use whole Almond and chop into pieces).
1/2 cup shredded Coconut (I use Sunflower Seed).


Pour all the above into a bowl.


Mix thoroughly, all well combined and well coated.


Bake at 185 Degree Celsius for 40 minutes or all even golden brown.
Every 10 to 15 minutes, please stir it occasionally.
Once done, leave it to cool and keep inside a container for later use.


Such a healthy food!  Isn't it is tempting to be eaten?

Today is Mother's Day and would like to wish all mothers
out there a Very Happy Mother's Day and may you have a
wonderful day with your family.
This year, we are not celebrating because I wanted my son and
daughter to concentrate in their exams. My son is sitting for his
Intermediate Law examination and my daughter is sitting for her
A2 (A Level) final examination.  Both of them are more stressed than me,
and I do not wish to stress them with this Mother's Day dinner and present.
To me, as long as they are treating their study and examination seriously,
then I am a very happy Mother.  Don't all Mother want that! 
We'll just go out for our normal dinner ...... so, the restaurants
out there do not have our business tonight...he he he.
Baked this Cream Cheese Pound Cake for my neighbour 
because last two weeks ago, she gave me one big tub of cream cheese.
(Just wanted to thank her and also wishing her Happy Mother's Day).
Adapted this recipe from Ju, The Little Teochew.  Thank you for sharing
this recipe.  The cake is superb.


Wanted to share this incident with you. 
Last month, while my husband was away overseas, 
my son cooked dinner for my daughter and I,
in fact his dishes are quite delicious.
Below is the picture of his 2nd day cooking for both of us.
That is what I call love from him to my daughter and I.
Dishes are Black Bean Fish (from tin), Fried Cabbage with
Cucumber and Tomato (where he got this ideal?) and Stir
Fried Seafood (where he got this ideal?).  He told me that he
bought all these ingredients from Jayajusco Supermarket.
I feel great and happy that he took the initiative to cook for both of us.
My daughter posted in her facebook and all her friends and 
cousins find it awesome.  
One happy mother and daughter.
The End....back to my recipe.



 195g Flour, 1/2 tsp Baking Powder, 1/4 tsp Baking Soda (shifted together).
1/4 tsp Salt (I omitted).
150 g Butter (room temperature), 140 g Cream Cheese (room temperature).
200 g Castor Sugar (I reduced to 180 g) , 3 Eggs (room temperature).
1/2 tsp Vanilla Extract, Zest of Lemon.


 Beat Butter and Cream Cheese until smooth.


 Add Castor Sugar (divide in 3 additions) and beat further
until smooth and fluffy.


 Beat in egg one at a time and beat until combined.
In between, I tend to scoop in 1 tbs of flour because I noticed it
became curdle.


 Beat in zest of lemon and vanilla extract.


 Beat in flour (divide in 3 additions) until well combined.


 Pour the batter into lined baking tin.


 Baked for 30 minutes at 180 Degree Celcius or until skewer
came out clean.


 Please let it cool completely.  If not, your cake will 
break when you turn into serving plate.

My husband commented to my daughter....huh! you came down
from your room because of Mummy's cake.
My neighbour's daughter who took the cake from me keep on saying
Yummy Yummy...Thank You Auntie.
