Foo Yung Tan (Egg with Onion, Spring Onion and Prawn)

Foo Yung Tan (Egg with Onion, Spring Onion and Prawn)

Whenever we have Chinese dinner outside, 7 out of 10 times, we will definitely
order this dish.  We won't be tired of it.  It is very easy to cook
and it's cheap also.  Do try it out.

This late morning, while resting after going to the morning market and cleaning
up those vegetables, meats and fruits that I bought, I came across an article in
the newspaper written by a guy I found I agree with.
Sharing with you as follows his article (it is quite lengthy but try to read it) :-

By Rathi Thevi Pragasam, Manchester

Please, count our blessings.......

I AM writing all the way from Manchester, England, not to illustrate the inclination of my political support nor am I objecting to anybody’s right to vote for whichever party they prefer. However, I do feel duty-bound as a Malaysian to ask my fellow countrymen to count their blessings.
All the meaningful Merdeka and Petronas advertisements over the years seem to be redundant when all Malaysians do nowadays is complain.
I watched and read about people complaining before, during and after the elections regarding a variety of issues ranging from how they just want to see a change because the ruling party has been around for too long to the issue of the elections just being corrupted in general.
It used to interest me when the rakyat asked for betterment but in the run-up to the elections, some people began asking for change just for that – a change. If I were the interviewer, I might be tempted to ask them, by the same reasoning, if they would consider changing their parents or spouses because they too might have been around for far too long.
The human race prides itself upon using reason and logic, but I find no logic in asking for a change unless it is for the better. Believe it or not, some Malaysians actually said they want change to just see what happens when another party takes the helm.
For people who regard the country as an experimental guinea pig, I say their voices in such a serious matter as governance should not be heard at all.
Much is being said about the suspected corruption in the elections but nothing has been proven in a court of law. One can make YouTube videos and blog about all the unfairness until the cows come home but I say that unless an authority that is guaranteed to investigate and determine the veracity of all these allegations can be found, it is healthier for us to accept the results as they stand.
Many Malaysians told me before and during the elections about how they “witnessed” unfair practices but I am puzzled as to why they must wait until the results to start the chaos, if the same people had doubts even before the elections. I cannot and will not suggest remedies for the unsatisfied citizens but it is common sense that one should not cry over spilt milk.
I am not any holier than thou. I admit I have complained about the many weaknesses of Malaysia but only over a teh tarik. At the end of the day, I am grateful for the public schools I attended and thrived in, the general hospital which has ensured the longevity of a dear uncle, the robust civil career of my mother, as well as a country to call home, not having to worry about war.
For those complaining about racism, do take a look at how the black slaves were mistreated in America. In the present day context, it is impossible to walk on the streets of some countries where a person is stabbed solely because of his skin colour.
When some things are constant, we just have to vary our methods and efforts to get what we want. There are many among the minority who did make it and are continuing to do so.
In some countries, there are children dying of starvation and people not ever having seen the inside of a hospital because of their governments’ corruption. We Malaysians not only boast about state-of-the-art hospitals but also world-class sports figures.
Malnourishment and fear of having a bomb dropped on our roofs at any time is a thought beyond most of our comprehension.
Striving for betterment is a purpose of living but to complain and not count our blessings will only make us bitter, which is counter productive.  Wake up and smell the roses, Malaysia.
~ End ~

As usual, when I am cooking, I'm always lazy to weigh
the ingredients but the result will always turn out great in the end!
Do not be put off whenever there are some recipes without any
measurement for you cause like our mother's cooking, they also
do not have the exact measurement...all agak-agak (estimation).
Just have a good and sharp ability to smell and taste and it will turn out
great and wonderful.

Ingredients for this recipe :-
4 Eggs / 1 Medium Size Yellow Onion / Around 20 pieces of Prawns /
Few Spring Onion

Eggs - Put a dash of salt and pepper and beat with fork.
Spring Onion - Clean and chop chop roughly but not fine.
Yellow Onion - Clean and chop rougly but not fine.
Prawns - Clean.

Beaten Eggs - Put in the chopped spring onions and stir well combined.

Heat up your wok or non stick pan with cooking oil.

Once your cooking is heated up, pour in the chopped yellow onion
and stir fry until half cooked.

 Then pour in the prawns.

Once your notice that your prawns is half cooked or turn reddish.

Pour in the beaten eggs with spring onion and cook further.
Once you notice that the egg batter is cooked,
flip over to the other side and cook further until done.

Cooked and Done.

When I turn over to my serving plate, it broke into three pieces...
Aiyoh! Tak Cantik (not pretty to look at) haish BUT
it does not bother me at all because the taste is great.

Tomorrow is Mothers' Day and Wishing All of You A Very Happy
Mothers' Day and May You Have A Wonderful Day With Your
Family.  As for me, I don't think I want to celebrate it because
my son will be having his 2nd Year LLB exam this coming
Monday... I don't want to stress him out (haish it is the same time
as previous year....never ending exam for my son and daughter).
As long as they did good in their exam,
THAT IS THE GREATEST PRESENT FOR ME!

Water Chestnut and Red Date Drink

Water Chestnut and Red Date Drink

Isn't it is refreshing and mouth watering?
These past few weeks, the weather is either hot or wet,
just like our coming 13th General Election schedule on
Sunday, 5 May 2013 (wink)
In my house, I have 3 voters except for my daughter who have
yet to reach her compulsory age to vote.
In this house earlier, there were 2 against 1 and now,
1 against 2.  You decide the answer...he he he.
Anyway, no matter what your choice is, just choose
wisely and not from your heart.  For me, I just want
harmony and peace for Malaysia.
This so called dessert or herbal drink is nutritional for our body.

I have forgotten to weigh all the ingredients but no worry,
by seeing those picture on top, you will be able to have a rough
estimation (agak-agak).

Put the clean and cut out seed from the red dates into a pot with
2 liter of water and boil.

Once you noticed your red dates are not dried and fluffy,
pour in the clean and cut water chestnuts into the boiling water.

Boil for another 15 minutes.   If you noticed that the water is getting
lesser, just pour in more.

Lastly, pour in honey rock sugar or any sugar that you desire
or available inside your kitchen.
Boil until the sugar has dissolved.

Switch off the fire and let it cool at one side.
Different people has different taste, some like to drink it lukewarm or cold.
To me, both also I like it.

This pot of drink was gone within three hours.
See, it means it is sedap!
Happy Cooking, Happy Eating & Vote Wisely.

Poppy Seed Cupcake

Poppy Seed Cupcake

I baked this cupcake on last Sunday to bring to
work the next day cause our office cafeteria will be closed.
I know some of my colleagues has forgotten that it will be closed on that day.

I pity people very easily.  Wanted to share this morning incident
at the market with you.  While I was there, I saw
one man with a 6 years old child selling toy cars.  I noticed
them immediately cause this man does not have one hand.
Upon seeing them, I was thinking: what a pity, this man is
trying to make a living without one hand.  I walked over to them
and asked them how much per toy car and he said RM5 and
told him I wanted 2 car toys and started conversation "your grandson?"
and he said no, "my son" and then I said "baiknya anak tolong
bapa jual barang" (good boy helping father to sell toys) and then gave
him RM50 and he told me that he has no change and
I told him to keep the change and bid them farewell.

He kept on thanking me and I replied to him
to buy some books for his son, don't want him to feel bad about the
extra money that I gave him.
Later, had breakfast with son before he goes off to college
for revision and asked my son whether he has any friends
who has small brother or sister.  He asked me why and I told him
about this incident and moreover both of my kids are adults....they
won't be playing these car toys.
I'm having a headache now wondering who to pass these car toys to and
am having wonderful feeling that I have indirectly helped this man,
even though it is a small amount.

1 tablespoon Vanilla Essence

Put butter, caster sugar and self raising flour into the mixing bowl.

And then all the eggs into the mixing bowl.

Beat everything until well combined.

Then pour in the Poppy Seed and Vanilla Essence and

Scoop the batter into cupcake paper liner with ice cream
scoop.  (Remember that your oven has to be pre-heated
before you start beating those batter).
Bake for 30 minutes
at 180-190 Degree Celsius (depends on your oven).

Freshly baked from the oven.

Citrus Peel Butter Cake

Citrus Peel Butter Cake
Woke up in the early morning to send my husband to the airport
going to Kota Kinabalu, Sabah for a business day trip.
Later, I didn't know what to do and decided to bake
this wonderful Citrus Peel Butter Cake to eat and at the same
time to give to my dear daughter's college friend, Fiona that
both of them met during their Cambridge A Level at Taylor's College.
She is one nice and humble girl.  My husband told me that our
daughter told him that her friend, Fiona said that "your dad
does not like me!".  Upon hearing this, I was flabbergasted cause
my husband looks fierce but he is one nice father figure.
Maybe my daughter's friend haven't know my husband yet.
Told my husband next time, try to smile like a crazy man
in front of her and don't look serious because he is
driving away our children friends.
Dear Fiona, if you are reading this, Uncle Yo won't eat
you up....ha ha ha.

Before you start scrolling down, just to let you know that
I have changed the existing peel from my recipe Kikuo's Orange Butter Cake
to 2 Lemon Peel and 1 Orange Peel.
The rest of the ingredients and method are the same.
It is very easy to make and do try it out.
Once the cake was baked, you can smell those
wonderful citrus peel and butter in the whole kitchen.

2 grated Lemon Peel and 1 grated Orange Peel

Bake for 30 minutes or until done and cool for 15 minutes
and turn into a serving plate.

Can't wait to dig in with my green tea.
I texted my husband that I have baked this cake
and waiting for him to come home to eat it
with his coffee....I am not a coffee drinker.

Have a happy weekend.

To some, it is fattening but to some, it is delicious.
How? Just dig in and then worry about it later...he he he.
Cook this for our breakfast especially my son before he rush to his
weekend class.  Yeap! what a boring life for him cause he has been
attending weekend classes since last six months ago.  This is his 2nd
year Bachelor of LLB.  Told him that if he passed this 2nd year,
we will ship him to UK for his final year.
I had two of the above and till now, I am still full (will be skipping
my lunch), if not, my belly will be become larger by the inch.

Some Sausages / Some Butter / Some Sausage Buns
Few slices of Cheddar Cheese

Heat up the pan with cooking oil or butter and pan fry the sausages

Split the buns into half and butter both side.

With the same pan, pan fry the sausage buns for 1 or 2 minutes.

Look like this.

Keep the cooked sausages and buns at one side.

Ginseng Drink

Ginseng Drink
Need to post as many recipes as possible before middle of next week because
we'll be going to Hatyai, Thailand for a short holiday.
My husband manage to secure 4 flight seats with "zero fare",
how lucky we are.  My two kids said, "Hatyai" again!
Told them we are going there to makan (eat) and rest only since
the flight is "zero fare".

Sharing this simple herbal "Ginseng" drink with you.
My age is catching up to late 40's and I have some bad experience
while having my menstrual.  For the past few months,
I notice that during my menstrual, I feel my pelvic area is very uncomfortable.
My husband told me to drink more Ginseng since his friend from
Canada bought a lot for us.  I have been boiling this drink
every alternate day for the past two weeks and I can assure you that it works.
There is no uncomfortable feeling during my this month menstrual.
So, you gals out there, if you are having the same problem like me,
do boil it for yourself.

6 pieces of Ginseng.

Wash and soak with hot water for 1 minute.

Place the Ginseng into a double boiler and pour in 1 liter of hot water.

Turn the switch to High and boil for 4 hours and
then turn to Low and boil for another 2 hours.

Note : If you wanted to boil it overnight, then
just turn the switch to Low and boil till next day.

Once done, let it cool before drinking.
I even brought the Ginseng Drink to office to drink (if I boil it overnight).

My family and I also drinking it.
Healthy herbal drink.

Dip - Garlic, Ginger, Cilantro
and Spring Onion
Chinese New Year 2013 (Year of Snake) will be coming in another few
more weeks only.  I believe all Chinese are busily making cookies,
snacks, cleaning up their house, buying new clothes and etc preparing
for the coming Chinese New Year.
This dip was taught by my mother in law, it is her secret recipe taught
to all her five daughter in laws.  All her sons, daughters, daughter in laws,
son in laws and lastly her grand children loves this dip.
Either you use this dip for your Steam Chicken (Pak Cham Kai)
or use it to stir fry with your chicken.  It is just lip smacking.
All Chinese loves to eat Steam Chicken (Pak Cham Kai) during festive season
especially eve of Chinese New Year when all goes back home to their parents
home for celebration.

I am sharing this recipe with you all so that you and your family will
definitely enjoy this dip.

know the measurement from the picture above.

Dice finely Ginger and Garlic.  Chop finely Cilantro and Spring Onion.

Heat up one table spoon or more of cooking oil.

Pour in the Ginger and cook for 1 minute.

Pour in the Gralic and cook for 1 minute.

Once you notice it is slightly turning to brown, pour in the
Cilantro and Spring Onion.

Stir fry for two minutes.

Season with some salt and remember to taste it.

Stir fry another two minutes or some garlic or ginger slightly brown
and it is done.  Dish up.
