Oat Raisin Cookies (Version 2)

Picture said a thousand words. Am I right?

Since this recipe was on trial, I did not take any pictures for the whole entire process!
I did not realize that it will turn out to be so perfect,
as tested by my wonderful family and friends (more than 10 people).
I'll just write down the ingredients and method for you to try it out
on your own because I know that it won't disappoint you.
This batter makes around 50 pieces of biscuits.


Method and Ingredients :-

1) Beat 240g butter with 300g brown sugar until it is light and fluffy.
2) Add in 2 beaten eggs and 1 tablespoon of vanilla and beat for a short while.
3) Add in 250g flour and 1 tablespoon soda bicarbonate and beat for a short while.
4) Add in 120g quick oats and beat again.
5) Add in 400g rolled oats and 160g raisins and beat.
6) Once all are mixed well enough, use a ice-cream scooper and scoop out into the baking tray.
7) Flatten the scooped batter with the back of a spoon.
(Note : the cookies are to be flattened and to not look like a mountain to avoid an unbaked middle part)
8) Bake at 180 degree celcius for 30 minutes or golden brown.

Stir Fried Long Bean With Tow Fu, Pickled Radish
And Groundnuts

When my brother and I were young, my beloved mother likes to cook this dish for us.
It is been my turn to cook this dish for my kids since many years ago
and would like to share this simple, tasty and healthy dish with you.
Hope you and your loved ones will like it.
Come to think of it, this dish is more than 40 years old.




Step 1
[Note : There is no measurement for this recipe.
You have to have the sight, sense and taste for it.]

Some Groundnuts - Do not wash.
2 pieces of firm Tow Fu - Wash and drained.
Some Long Beans - Wash and drained.
Some Pickled Radish - Wash and drained (Choy Poh - In Cantonese Translation).
Cooking Oil.





Step 2
Long Beans - Cut into your desired sizes.
Tow Fu - Cut into strips.
Pickled Radish - Cut into small pieces.





Step 3
Heat up the pan (do not pour oil) and pour in the groudnuts
and stir until cooked and dish out.





Step 4
Heat up the wok or pan, pour in cooking oil and fried the tow fu until they're browned.





Step 5
Dish out the fried tow fu.





Step 6
Heat up the wok or pan, pour in cooking oil
and stir fried the pickled radish until it's slightly brown.





Step 7
Once the pickled radish it's slightly brown, pour in the long beans
and stir until the long beans are cooked and then sprinkle some salt and pepper.





Step 8
Pour in the tow fu and groundnuts and stir for a few times.





Step 9
Dish out and serve in a plate.

Stir Fried Ladies Finger With Dried Shrimps

Tasty, healthy, delicious dish.

This dish was cooked by my son. He helped me because I was tired from shopping with my mother, daughter and himself at Mid Valley from 10.00 am until 4.30 pm. He learned this dish from his grandmother.




Step 1
15 pieces of ladies fingers - washed, drained and cut to your desired sizes.
4 pips of garlic - washed, drained and chopped.
2 tablespoons of dried shrimps.
2 tablespoons of oyster sauce or more.
2 tablespoons of cooking oil.




Step 2
Heat the wok with cooking oil.
Once heated, pour in the chopped garlic and dried shrimps.
Stir until the it is slightly brown.




Step 3
Pour in the ladies fingers and stir until it is done.
If it is too dry, pour a few tablespoons of water.
(Do not pour so much of water)




Step 4
Pour in the oyster sauce and stir for a few times and dish out.




Step 5
Tasty, healthy, delicious dish.

[If you like this dish to be spicy, then you can put
a few dry chillies at Step 2. In fact, my son wanted to add
into this dish but we ran out of dry chillies.]

This morning, it was raining heavily and while waiting the rain to stop in order for me to go marketing, I asked myself what to cook and magically came out this simple dish from my head.




Step 1
300g Prawn - Shelled, wash and drained. Marinade with sugar, salt and pepper.
(Sugar makes the prawn crunchy.)

5 Eggs mix with pinch of salt and pepper and beat for a few times.

A few stalk of Spring Onions - Washed, drained and cut into your desire sizes.

Cooking Oil.




Step 2
Mix the spring onions into the beaten eggs.




Step 3
Heat up the pan with cooking oil.




Step 4
I divided the prawns into two portions.
Pour the 1st portion of the prawns into the pan and cook until slightly cook.




Step 5
I divided the beaten eggs into two portions.
Pour the 1st portion of the beaten eggs into the pan
and cook until the bottom brown
and then flip over to cook until brown.

[Repeat again from Step 3 for the 2nd portion]




Step 6
Aahh......can't wait to cook this simple delicious dish...am I right?

[When my daughter saw this dish...straight away she asked me when dinner will be served!!]

Braised Pork In Dark Soya Sauce

My dear Stephanie Chua (friend and colleague) gave me this recipe, when told her that I am not sure what to cook during this long weekend holiday. She suggested this recipe and it is her husband favourite dish. I never regretted cooking this dish because it came out superb and tasty. My family loved this dish. Thank you Stephanie for sharing this dish with us.





One Clove of Garlic (wash, drained and cut away the top and bottom)

2 Tablespoons Soya Sauce
2 Tablespoons Oyster Sauce
1 Tablespoon Dark Soya Sauce
1 Teaspoon Pepper
(mix all the sauces with pepper together)

1 1/2 Tablespoons Caster Sugar

3/4 Cup Water

3 Tablespoons Cooking Oil

Pork Belly (Fah Yoke in Chinese Translation)
- Wash, drained and cut into slices (thickness depends to your preferences)
(I forgotten to weight the pork. Anyway, the pork belly cost me RM9.00)




Step 1
Heat up the pot and pour in cooking oil.
[I love to use pyrex to cook.
It can cook on top of the stove and serve at the dining table
without any hassle to transfer the food from the pot to the serving plate.
Save a lot of washing.]




Step 2
Once the oil is heated, pour in the sugar and stir a few times.




Step 3
Let the sugar caramelised.




Step 4
Pour in the pork belly and stir a few times (don't stir too long).




Step 5
Pour in the sauces and 3/4 cup water and stir for few times.




Step 6
Cover and braise for 30 minutes with medium fire.




Step 7
It look like this after 20 minutes.




Step 8
After 30 minutes and if you are satisfied with the remaining sauces,
then switch off the fire.
If you feel that there is too much of oil on top, then by all means, scoop it out.
[Note : Don't be alarmed, the extra oil came from the fat of the pork belly.]

Oat Raisin Cookies (Version 1)

Oat Raisin Cookies (Version 1)
This cookie is very healthy with lot of oats and raisins.
To some people, they do not like to eat oats but if you try it once in a while,
you will end up liking it.
Eat healthy food and you will have healthy body.
My whole family loves this cookie.



Preheat the oven to 180 Degree Celsius and line the cookie tray.



Slightly beaten - 1 egg, 140 ml corn or vegetable oil and 4 tbsp milk

170 g Plain Flour
150 g Rolled Oat
1/2 tsp Baking Powder
1/2 tsp Bicarbonate of Soda
130 g Brown Sugar
90 g Raisins



Stir the flour, oats, baking powder, bicarbonate soda,
brown sugar and raisins with a spatula.
Make a well in the center and then pour the
egg mixture into the dry ingredients.



Mix well together.



Use a medium size ice-cream scoop and
scoop the dough well apart on the lined cookie tray.



Flatten with a fork and bake at 30 to 40 minutes at 180 Degree Celcius.
(Note : the cookies are to be flatten and not look like mountain to avoid unbaked middle part)



Once, baked.......cool it and then transfer to cookies jar.

Minced Meat Ball Porridge

Minced Meat Ball Porridge
This is a very smooth porridge. Lovely to eat during hot season or when you are recuperating from sickness.



Step 1
1 cup of rice - wash and drained and marinade the rice with salt and oil.
(By doing so, the porridge will come out smooth)

Stir in salt, pepper and corn flour into the minced meat.
(Note : Corn flour to make the minced meat stick to each other)

Thinly slice young ginger.



Step 2
Round the minced meat into balls.



Step 4
Boil the rice with water.
(I poured 3 big bowls of water. The size of the big bowl as per picture at Step 1)



Step 5
Once, the water is boiled, slightly open the lid cover. If not, the rice water will spill out.



Step 6
While boiling, make sure you stir the rice constantly to avoid the bottom being burnt.
If the porridge is too thick, pour hot water into it and stir.



Step 7
Pour the minced meat balls into the porridge and cook until done.
When you noticed the meat changed colour, then it is cooked.



Step 8
Stir for a while until all the whole minced meat balls are cooked well.
Or
Maybe you take out one minced meat ball to test it out.



Step 9
Once done, pour the slice young ginger and stir.



Step 10
Serve hot.
Or
When you want to eat later, remember, you can always heat it up and if the porridge is thick, you can always pour hot water and stir.
