Meat & Fish Balls Soup

Meat & Fish Balls Soup

You must be wondering what has happened to me?
Why suddenly blogging so many food during this month?
Well, I wanted to finish blogging all my recipes that has been
hyphenating inside my PC before end of this year and
soon I will be going to 3 countries for holiday with my family.

First, you have to boil the dried anchovies soup (click here for this recipe).

Once your anchovies soup is boiled, pour in your
favourite meat balls, fish balls and etc. Let it boil.
Once the meat or fish balls are floating on top,
that means it is cooked. Then turn off the fire
and serve. Taste it, if not enough of pepper or salt,
then drizzle in some.
Garnish with some chopped spring onion.

Serve with rice.
Adults and children sure will like to drink this.

Dried Anchovies Broth (Soup)

Dried Anchovies Broth (Soup)

Instead of chicken soup, you can use this
Dried Anchovies Soup (Kong Yee Chai Tong in Cantonese)
as your soup base for noodles soup, vegetables soup and etc.
Very easy to make, if you have made extra,
you can frozen it for another day to use.

2 cups of Dried Anchovies Soup - wash and drain.

(if you purchase whole dried anchovies, please take out
the bones and inner stuff)

Heat up 1 cup of cooking oil.

Once heated up, pour in the dried anchovies and
stir fry until slightly brown......not overly brown,
if not your soup will be bitter.
Then pour in water.

Let it boil for 1/2 an hour.

After a while, impurities will be floating on top,
scoop it out and boil further. Taste it and add
pepper and salt, if prefer.
Swtich off the fire.

Well, isn't it is easy to boil?

Dried Anchovies Soup (Kong Yee Sai Tong in Cantonese)

I use this soup quite often for my noddle soup, vegetables soup
and etc.

Pan Fried Dried Bean Curd With Fish Paste

United Buddy Bears
promote living together in peace and harmony.
You should bring your family, friends to visit a total of
147 larger than life sculptures at Pavilion, Kuala Lumpur.
These painted bear sculptures are individually designed by
artists from all the countries recognised by the United Nations.
It will only exhibit until 15February 2012
and will make their way to another country,
Malaysia is the 1st South-East Asian country to be chosen for its tour.
The Buddy Bears exhibition was 1st held in Berlin in Year 2002.

My daughter and I took this
United Buddy Bear called Luxembourg after our
dinner at Jogoya, Starhill, yesterday night. Three of us including my son
had dinner celebrating my son 2nd Moot participation organized
by his college and also to derail my daughter sadness over one
of her college friends back stabbing among themselves.
Thanks God, they found out before everything got out of hands.
Well, I have told her that if this friend of their does not appreciate
their friendship, then forget about her and carry on with their life.

Below is the picture of my son cooking Shabu-Shabu at
Jogoya......we have fun eating, talking, laughing and etc,
too bad that my husband did not join us because he is away
for business.

Back to cooking recipe .........

Soak the Dried Bean Curd Sheets with water

Cut into your desired size.

Place one teaspoon of Fish Paste to the middle line
of the Dried Bean Curd sheet.

Fold it and use your finger tips to press the Fish Paste

in order for the Fish Paste to be cooked thoroughly.

Look like this after you have press it.

After you done all, leave it at one side.

French Toast

French Toast

Yesterday night, while preparing to sleep,
my dear husband told me that he wanted me to
make him breakfast before flying off to Sarawak
for one day trip because he does not want to rush
himself looking for breakfast outside.
Since he requested for it, I cannot say "NO".....so,
my brain starts to process what to cook for him and
since I have all these ingredients inside my fridge,
why not make for him French Toast With Pan Fried Bacon.
This is our breakfast for today.

6 slices of White Bread.
1 tablespoon of Brown Sugar (I am short of Caster Sugar).
2 tablespoons of Milk.
3 Eggs.

Happy Notes from me :) :) :).....(Did you see the Bright Red Colour Tongs?
I bought it from Pantry Magic which was introduced by
Thanks to both of them, I FINALLY found the Tongs that I have
been looking for since last year.....I am very fussy with kitchen utensils,
too cheap - won't last long, too expensive - burn my pocket.
Aiyah! What a fussy person I am.......this one is perfect!!!
Beside the Tongs, I bought a few items.
My husband saw me using the new Tongs to cook breakfast for him
and commented, open ceremony? I happily said "YES! DEAR")

With a wide bowl, pour in the brown sugar, milk and eggs.

Whisk all until well combined with bubbles on top
of the batter.

Heat up the non-stick pan with 2 tablespoons of
vegetable oil or butter.

Soak the bread both side into the batter.
DON'T soak too long, if not, your bread will become soggy.

I serve it with cut fruit for my dear husband.
While eating, he told me not to forget to make for
our children (my son and daughter are no longer
called children or kids but young adults......
but as parents, we still treat them as children or kids)
I said no problem because I have cooked plenty.
Happy Cooking and Eating.

Air Mata Kuching

Air Mata Kuching

Mata Kuching is one of our Malaysia local fruits.
The flesh is sweet and crunchy.
It is smaller in size than Longan.
I bought this Mata Kuching from market,
sold by a couple at RM5.00 per kg.
Direct translation from Mata Kuching ("Cat Eyes")....well,
after peeling the skin off, it looks like Cat Eyes!

Full Translations : Air (Water), Mata (Eyes) and Kuching (Cat)

You should try this fruit, you won't regret it.
You can eat it directly or make it into so call dessert or beverage.

Wash thoroughly until the water runs clear.
I put inside the fridge to cold it.
After one hour, take it out and peel off the skin.

You are going to need :-

Peeled Mata Kuching.
One Jug of Cold Water.
Some Ice Cubes.
Some Sugar Cane Rock Water (click here for recipe)

In a bowl, pour 2 tablespoon of Sugar Cane Rock Water
and few Ice Cubes, then 2 cups of Cold Water and
lastly drop in few Mata Kuching and stir.

Look refreshing to drink, isn't it.
Ok.....go to the market or fruits stall to buy the
Mata Kuching and make it immediately for you,
your family or friends to drink.
My dear daughter took 2 bowls, same goes
to my husband and son.....me???
Of course, 3 bowls-lah :)

Sugar Water (Syrup)

Sugar Water (Syrup)

One of my friends called me up asking how to make Sugar Water.
Told her that it is very easy to make.
(Please forgive her, she is a working mother and not a cooking mother)

Just wanted to blog this for her or others further reference.
:)

80g of Rock Cane Sugar.
(if you do not have this Rock Cane Sugar,
you can use Caster Sugar)

750ml Water. (lesser water, the sweeter it will be)

If you have Screwpine Leaves, will be better because
it enhance the taste (fragrant).

Boil it for less than 10 minutes and the
Rock Cane Sugar will be dissolved.

Once done, let it cool and keep at one side for later use
or keep in the fridge for another day to use.

Dorayaki (Japanese Red Bean Pancake)

Dorayaki (Red Bean Pancake)

My whole family loves this Dorayaki,
favourite food of Doraemon). I've always thought that
it is difficult to make until I saw it from Nami from
Just One Cook Book . Thanks to Nami for sharing this recipe.
It is so easy to make and inexpensive.
You should try it out, my daughter and I
had great fun making it.

140g Caster Sugar (it is quite sweet, next try will lower to 120g).
4 Eggs (room temperature).
160g Flour and 1 tsp Baking Powder (shifted).
190g Red Bean Paste.
2tbsp Honey.
2tbsp Water.

Pour Caster Sugar, Eggs and Honey into bowl.

Beat until fluffy.

Pour in the Flour.

And mix well until combined.

Put into the fridge for 15 minutes.

After 15 minutes, take it out from the fridge and
pour 1 tbsp of water and mix well. Do not pour in
so much water. The texture of the batter should be
thicker than the normal pancake batter.

Oil your pan with kitchen paper towel.
The oil cannot be visible through naked eyes.
Medium fire.
Pour in the batter from 1 foot high.
Pancake should be 3 inches diameter.
To me, sizes depend on you.

Cook with medium fire.

Once you see the bubbles coming out,
flip it over to the side and cook further.
Remember, while you are cooking the pancake,
please do not go anywhere or do other things,
because your pancake will get burnt easily.

Once done, scoop it out and put into wire rack
and cover with kitchen towel.

I made around 13 pancakes.
Spread the Red Bean paste on top of the pancake
and then place another pancake on top.

My daughter said my Dorayaki has more Red Bean taste
compared to the outside ones. My husband and son said it is
delicious except that it is a bit sweet. My daughter is even going
to facebook her friend about it because she knows that
this friend particularly likes Dorayaki.
The above Doraemon handkerchief was gift from our
Japanese friend, Kikuo Ikegami to my children few years ago.
