Thai Sweet Sticky Rice with Mango

Thai Sweet Sticky Rice With Mango
Saw some left over of Glutinous Rice and since I have Mango inside
the fridge, without wasting any time, I cook this snack for my dear husband.
It is his favourite!  Everytime, whenever we visit Thailand, he won't
miss eating this snack.

 155g Glutinous Rice.
One ripe Mango.
One small carton 200 ml Coconut Milk.
1 tablespoon of Caster Sugar.
Pinch of salt.

Soak the Glutinous Rice with water, preferably overnight or more than 4 hours.
Wash the Glutinous Rice until the water is clear.

Add in the Coconut Milk, Caster Sugar and Salt.

 Combine well.

Steam for 20 minutes or until cooked.

While it is hot, fluff the glutinous rice and let it cool.
If it is not enough sweet, please add Caster Sugar.

While waiting the Glutinous Rice to be cooled, peel the Mango
and cut into desire sizes.

At the end, my husband had two plates and told me that it is indeed delicious.
For me, the rice a bit soft.  Next try, will reduce the Coconut Milk
to 100 ml to 150 ml.

You won't regret making this snack because for sure your family
will give you this empty plate.

Have a good and relaxing weekend.

Vegetarian Glutinous Rice With Mushroom

Vegetarian Glutinous Rice With Mushroom
Today is the last day of Chinese New Year
and also celebration of Valentine Day.
Would like to post this snack before the end of CNY.
I cooked this dish on the 1st day of CNY because
all eight of my sisters in law refrained themselves from eating meat on the
1st day of Chinese New Year. Your eyes must be wide open by now
upon reading "eight sisters in law".  Yeap, my mother in law has
nine children and my husband is 5th.
This snack was finished within 10 minutes and I should have made
more because some did not have the chance to eat it because all
those brothers in law including nieces, nephews and their children
(grand nieces and grand nephews) are also eating it.

This recipe was given by my dear colleague, Stephanie Chua and
I have amended some of the ingredients.

400g Glutinous Rice (soak overnight, more than 8 hours) and then
wash it until the water clear.
12 pieces of Dried Chinese Mushrooms (soak until soft and squeeze
out the water and cut into desired sizes).

Mix the cleaned Glutinous Rice with 1 tablespoon of cooking oil and
steamed for 20 minutes in high fire.  Take out quickly and fluff the
glutinous rice and steam again until the glutinous rice is cooked.
Once cooked, take it out from the fire, fluff it and leave at one side.
Note : No need to put water with the glutinous rice when you are steaming it.

Heat up the wok with 1 tablespoon of cooking oil and add in the
cut Chinese Mushroom and stir fry for 2 minutes and add in the
1 tablespoon of Vegetarian Oyster Sauce.

Mix until done and leave at one side.

Add into the wok, the cooked steamed glutinous rice and
fry for one minutes in medium fire.

Add in 1 tablespoon Dark Soya Sauce,
1 tablespoon Soya Sauce, 1 tablespoon Vegetarian Oyster Sauce
and 1 teaspoon Pepper and mix until well combined.  Season to taste.
Note :  Mix sure the sauce are mix thoroughly before adding into
the glutinous rice.

Add in the cooked Chinese Mushrooms.

 Mix until well combined.

Vegetarian Glutinous Rice With Mushroom.
Hope you, your family and friends have a great Chinese New Year
and may this Year of the Horse brings you, your family and friends
a joyful, successful, prosperous and healthy year.

15 Minutes - Fried Rice With Carrot and Egg

15 Minutes - Fried Rice With
Carrot And Egg
While posting this fried rice, I am salivating because I love fried rice and
same goes with my family.
Easy to cook, delicious to eat and cheap to our pocket.

2 bowls of cooked rice (preferably overnight).
2 beaten eggs with dash of pepper and salt.
1 carrot (cleaned and julienne).

First of all, you need to cook the carrot to 80% done and leave at one side.
(Note : Don't over cook the carrot)

Heat 1 tablespoon of cooking oil and 1 teaspoon of salt.

Add in the cooked rice and stir for 2 minutes.

 Add in the beaten eggs.

Stir for 3 to 4 minutes or until the eggs 80% done.

 Add in the carrot.

Stir until all the eggs are cooked.
You will notice that the rice is no more wet.

Sometimes I cook this dish to bring to work for my lunch or
my daughter (crazy for any fried rice) will bring to college.
Both boys in our house (husband and son) will be just boys will be boys,
prefer to eat at home.

Meal 1 - Rice, Pan Fried Dried Bean Curd with Fish Paste And Stir Fried Cabbage with Dried Shrimp

Meal 1
Rice, Pan Fried Dried Bean Curd
with Fish Paste And Stir Fried Cabbage
with Dried Shrimp

Once in a while, we do not know what to cook or bake.
Am I right?
The truth is that I bake more than I cook.
I do not have to worry what to cook from Monday to Friday
because my dear mother still cook for us.  Either my husband or
one of my kids will drop by at her house at a specific time to collect our
food.  All those food cooked by her will be put in a tiffin except for the
rice and soup which will be put in a warmer.  I cook only during weekends
or public holiday and it also depends on my moooood.
HahaHa, so bad of me, I just wanted to relax and lazy around during
weekends after my hectic working life from Monday to Friday.
Well, so far, no complaint from my family but I feel that they are
happy if I cook for them.

If you like the above two dishes, just click below for the recipes.

Bon Appetit!

Long Bean & Chinese Sausage Rice

Long Bean & Chinese Sausage Rice
The majority of Chinese households will cook this dish and
different household will put in different ingredients.
In this recipe, I incorporated Long Beans and Chinese Sausages only.
There's a Chinese saying called "Yat Wok Suk" which means
"everything cook in one pot" which in this case, is a rice cooker.
Since two weeks ago, I have been leaving my office at
around 8.30 pm to 9.00 pm and reach home before 10.00 pm.
I feel so guilty towards my family for working so late but
what to do when there's big responsibilities and
they come at the last minute.
This dish is my family favourite and  I cook this dish today
with love and a way to thank them for being understanding.

250g Long Beans.
350g Rice.
160g Chinese Dried Sausages.

Discard the string from the Chinese Dried Sausages and
place in a plate.

Pour in hot water and leave it for 5 minutes.

Take out the edible skin from the Chinese Dried Sausages.
The choice is yours if you prefer to eat the skin.

Cut the Long Beans and Chinese Dried Sausages
into your desire sizes and leave at one side.

Wash the rice until the water comes out clear.
Pour in tap water (800ml).

Note : Measurement of the water to cook the rice
depends on your rice.  Remember to put more by
around 100ml since you have other ingredients to be cooked
inside the rice cooker.

Then pour in the cut Long Beans and Chinese Dried Sausages.

Lastly, pour in 2 tablespoons of Soya Sauce,
1 tablespoon of Dark Soya Sauce, dash of pepper and
dash of Sesame Oil.
Switch on the rice cook and cook it until done.

When the rice is 3/4 cooked, open up the rice
cooker lid and use the rice spatula and mix the rice
thoroughly and cook until done.

Am I right? So easy to cook and delicious to eat.
Happy Cooking and hope you have a wonderful weekend
with your family.

Seafood Fried Rice

Seafood Fried Rice
I got this idea when I was browsing inside the Isetan Supermarket
in KLCC with my daughter.  Firstly, we went
there to purchase some books from Kinokuniya Bookstore.
Saw this lovely pre-packed seafood consists of prawns,
clams and squids.  I just need to wash it.  Such an easy job...
no need to peel and cut.  Once in a while we need to
pamper ourselves.  Hehehe.
I need to apologise for not writing down the weight of
all these ingredients because this is just an agak-agak (estimation) only.
Don't be scared if you want to agak-agak (estimate) because
to me, it is not the end of the world!  Good news is that we don't
need to use so much of our brain cells to weigh and weigh and
write down.

Three bowls of cooked rice (preferably over night).
4 eggs.
Some prawns, squids and clams.

Beat eggs with dash of pepper, soya sauce and salt.

Marinate the seafood with dash of pepper and salt.

Beaten eggs.

Heat up the wok with cooking oil.

Pour in all the seafood and quickly stir fry and then pour in
1/2 tablespoons of cooking rice wine.

Dish out and put at one side.

Heat up the wok with cooking oil and 1/2 teaspoon of salt.

Pour in the cooked rice and stir for a few times.

Make a hole in the middle.

Pour in the beaten eggs.

And stir fry until well combined or until the rice has the popping
sound.

Then pour in all the cooked seafood.

And stir until done and scoop out into serving plate.

My daughter and I finished all the above.

I am so happy that I have made a good decision by sending my
son to a Legal Firm as Attachment Student for 3 months (since he
is on holiday and will resume his Part 1 LLB in September 2012).
Even though he has a small allowance from the firm but to me,
the experience and exposure are better than anything else.
This week will be his 3rd weeks and he is LOVING it.
After the 2nd week, he said "Mummy, practical is better than theory"
which one can't learn from college.
Now I am cracking my head where to send my daughter to?
[She is having long holiday while waiting for her Cambridge A Level, either
she will start her LLB (yeap! following her brother's foot step)
in September 2012 or January 2013 Intake...she is still pondering. This girl likes to ponder a lot :]
